Shunting in Yards - which direction?

I am currently enjoying browsing through the newly published book of Montague Smith's photos - wonderful. Many thanks to those behind it's production. It's particularly good for me in my efforts to represent Biggar in model form. It's good to know that I got the point rodding right in a few areas!

Looking at the photos of locos in the yard, they are almost all "smokebox end towards the buffer stops". I had always assumed that shunting would be done when the train and locomotive are heading in the down direction towards Peebles - that would seem the easy way to a layman.

Does anyone know if there was a favoured way of shunting goods wagons from passing trains where the yard is only accessible from one end?
